Easy Curry Chicken Recipe

Curry Chicken

Fixing chicken is always an inexpensive item to prepare.  I love this recipe.  I learned this one from my hubby.  He would always fix curry chicken when we were dating.  I like to fix this because it is very inexpensive to make.  Chicken is one of the least expensive meats to buy these days.  When it goes on sale, I always buy up quite a bit and freeze for future dinners.  This recipe tastes best if used with real curry powder.  You will probably want to purchase the curry seasoning from an Indian or Jamaican market.  I use quite a bit of curry when preparing, but I have cut it down a little bit for people just experimenting with this type of dish. Also, I always make small dishes.  This dish has 4 servings (1 serving = 5 wingettes).  Play around with the ingredients until you get it to your liking. Enjoy!

Preheat oven at 425 degrees.

Ingredients

20 wingettes or drummettes

1/2  onion

1/2  red bell pepper

1 tsp  garlic powder

1/2  tsp season all

1 to 2  tbs Jamaican curry powder

1 tsp  Italian seasoning

1/4 tsp  Caribbean all purpose seasoning

 

Directions

Wash and let dry 20 pieces of wingettes or drummettes.  I only used 20 pieces, which was about half bag of a regular 4lb frozen bag. If you’re cooking for more people, just double or triple the ingredients.  Place in a large enough container for cooking to allow for adequate spacing.

Slice the onions and red bell peppers.  If you would like to add green bell pepper, go ahead. Do not dice. I like to leave them just sliced as to make for better presentation.

Mix the chicken, onions, peppers and all the dry ingredients in a cooking container.  I used a glass cooking dish.

Cover with aluminum foil and cook for 1 hour.  After the hour is up, I normally put it under the broiler for about 4 minutes to give it that brown appearance.

Allow to cool and place chicken in a serving dish.  Delicious!
