Carrot Cake Muffins

 

Makes at least 24 Muffins

Buying muffins is an expensive thing to do.  Though, this recipe requires more work than some, it is well worth it.  Especially, if you buy or grow a lot of carrots.

If you’re trying to figure out what to do with those extra carrots that you have, then this is the recipe for you.  These are great little muffins that the kids will love.  I don’t put any type of frosting on my muffins or cakes when I bake them.  I think they are sweet enough without any type of frosting.  These are delicious and super moist!

Ingredients

2 cups all-purpose flour

1  1/2 tsp baking soda

2  tsp baking powder

1  tsp salt

1/2  tsp nutmeg

1  1/2 tsp ground cinnamon

1  1/2 c  vegetable oil

4  eggs

2 c  granulated sugar

3 c shredded carrots

4 oz  crushed pineapple (do not drain the juice)

1 c  walnuts (chopped)

Directions

1.  Mix the flour, baking soda, baking powder, salt, nutmeg and ground cinnamon together in a bowl.

2.  In a different bowl, mix the eggs, sugar, oil together.  Beat until well-blended.

3. Pour flour mixture into bowl with eggs, sugar and oil mixture.  Beat lightly until thoroughly blended.

4.  Put in carrots, crushed pineapple, and walnuts.  Stir with a spoon or beat very lightly with a blender.

5.  Turn oven on to 325 degrees.

5.  Line muffin pan with cupcake papers.

6.  Pour mixture into muffin pan.

7. Bake for 30 minutes.  May take less or more time depending upon your oven. Insert a toothpick into a muffin to check and see if it comes  out clean.

  2. If I wanted to make mini-muffins, would the bake time change??

    • Hi Stephanie! I’ve never baked mini muffins but I’m sure that it would take lesser time. You might want to keep an eye on it when it approaches about 15 minutes or so. Just test and see if you get a clean toothpick when inserted. Mini muffins sound good. When I bake items smaller, they tend to last longer.
