I love that the cold weather has arrived! What does that mean to me? It means stews, soups, and chicken and dumplings arriving on our table. This is a favorite winter dish in our house during the winter months. I cooked up a nice pot of chicken and dumplings today. It helps to warm the body and the heart. It’s quite simple to make, too. Just follow the directions below and you’ll understand why we love this dish.
Ingredients:
- 2 leg quarters
- 1 or 2 green peppers
- 1 onion
- salt and pepper
- garlic seasoning
- vinegar (optional)
Directions:
Cut up the bell pepper and onion. Put chicken leg quarters into a pot of water and place onion and pepper into pot. Boil for up to an hour depending on the size of your chicken.
Remove chicken and peppers from the pot. Let chicken cook. Discard peppers. They were for seasoning purposes, only. Remove chicken stock from stove until chicken has cooled.
After chicken has cooled, cut into small pieces. I am using a flat dumpling that I bought at the store. You could make homemade dumplings if you don’t have a store near you that sells these type. I love these dumplings because they are so thin. I prefer a thin dumpling than a thick dumpling.
You can see how thin the dumplings are in the first photo. I use about 8 sheets of the dumplings. There are three parts on each sheet. This is how small I break the dumplings. This size gives a nice bite.
Put chicken stock back on stove and bring to a boil. When water begins to boil rapidly, put in dumplings. Let dumplings boil for about five minutes. Do a taste test to see if dumplings are soft enough for you.
After dumplings have cooked, put in chicken pieces. Next, put in cream of chicken. This is what thickens the recipe. I used almost the entire can of cream of chicken. It will depend on how thick you would like your chicken and dumplings and how much chicken stock you had in the pot from the beginning. We prefer our chicken and dumplings thick.
Now, I like a little coloring when I fix this dish. It needs a tint of yellow to make it appealing. This is optional. Don’t forget about seasoning your chicken and dumplings. I seasoned it with salt, pepper and vinegar. My daughter loves the slight taste of the vinegar. I put a little bit of garlic seasoning, also. Stir. Then serve.

Anne’s dumplings are so good. Make this all the time. Sometimes I buy a rotisserie chicken from the deli and make this if I don’t have enough time to cook my own chicken. But homemade broth is the best.

Ohhh this looks delicious! I love to try new chicken recipes and believe it or not I have never made dumplings. My mom has. Even my younger sister has. I have just been afraid that I would mess it up 🙂
