I went old school this morning and made fried tomatoes for breakfast. My kids were floored that people actually fried tomatoes and liked it. I tried to explain that this was a dish that I ate when I was growing up. Mother didn’t fry the red tomatoes, only the green ones. However, I only liked the tomatoes that had a little red in it. So, I picked out red tomatoes that weren’t too ripe and they were delicious! Fixed some eggs on the side and called it a day. Yum! There is really not a major recipe for fixing this, but I will list below.
Ingredients
4 medium tomatoes (red or green)
2 cups of cornmeal
salt and pepper to taste
oil (enough for frying tomatoes)
Directions
Prepare a bag with cornmeal and season with salt and pepper.
Cut tomatoes in slices.
Heat oil in frying pan.
Dredge tomatoes in cornmeal. Shake off excess cornmeal and place in hot oil. Let tomatoes brown on side and flip over to let other side brown. Will only take a few minutes to brown. Drain on plate with paper towel. Eat while warm.
I have never tried fried red tomatoes, only green ones. (Which I Love!) I’ll take a chance and fry some up tonight!
They are delicious! Just make sure they are not too red ripe or they will fall apart. Give it a try, for sure….
