Cheesy Hash Brown Con Queso Loaf

Who needs plain hash browns when you can have this delicious Cheesy Hash Brown Con Queso Loaf. I was mulling around in the kitchen while trying to come up with a 5-Ingredient recipe for Simply Potatoes. This is what my imagination led me to create. It only has 5 ingredients. Simply Potatoes is having a 5-Ingredient Recipe Contest. The Grand Prize is $3,000! Plus, there are other prizes. You can find more details here. Unfortunately, I won’t be able to participate. Remember, you can only have 5 ingredients in your recipe and at least one of the ingredients has to be Simply Potatoes Cut Potatoes (any variety) Simply Potatoes Mashed Potatoes (any variety) or Simply Macaroni & Cheese. What did I include in this recipe? Well read on….

Ingredients:

1 package of Simply Potatoes Shredded Hash Browns
1 package of shredded cheese (any kind that you like)
1 pound of ground beef
1 jar of any type of salsa con queso
vegetable oil

Optional toppings: parsley, tomatoes, red pepper flakes

Directions: (Preheat oven to 425)

Pour enough vegetable oil in bottom of frying pan to cover bottom. Pour in entire bag of Simply Potatoes Shredded Hash Browns. Spread evenly in pan. The directions on bag states to cook for 6-10 minutes. However, I’m going for a crunchy taste, so I cooked them for about 20 minutes. (Or, until they are crispy enough for you.) Turn over when they have browned or crisped enough. Let crisp on that side. Remove and place on paper towel to drain. These are really nice hash browns. We’ll be testing these out again as plain hash browns for breakfast.

Brown ground beef. Drain.

While the ground beef and hash browns are cooling, heat the salsa in the microwave. I put the salsa in a plastic container and heated for about 2 minutes. The plastic measuring cup came in handy for pouring salsa.

Using a loaf dish, put in a layer of hash browns. Notice the crispiness of the hash browns. (Keep in mind that you will use two layers of hash browns in this dish when layering.)

Put in a layer of shredded cheese. Don’t put in too much. You only need a thin layering to cover the hash browns. It will help to bind the hash browns together.

Put in a layer of ground beef.

Pour a layer of salsa to cover ground beef.

Then, cover with another thin layer of shredded cheese. You will now repeat the following steps: a layer of hash browns, shredded cheese, ground beef, salsa and top off with another thin layer of shredded cheese. Put in oven for 12-15 minutes. This will allow the cheese to melt and bind ingredients together. Remove from oven and allow to cool. (Allow enough time for it to set. Perhaps, 30 minutes. This will make it firm enough to slice.) Pair this dish with a side of vegetables and you have a full meal. Hash browns are not just for breakfast, anymore…..
