Best Recipe for Vanilla Cupcakes

This picture says it all.  These are definitely the best vanilla cupcakes ever. The kids loved the cupcakes I baked today.  This is my second batch.  The first set of cupcakes I made were not as moist and tasty as this one.  I used more vanilla, butter and oil with this set.  Turned out fabulous…not to mention the fact that I dropped 8 of the 12 cupcakes in the oven when I was trying to get them out.  This cupcake almost looks like an ice cream cone.  My daughter loves a lot of whip cream on top of her cupcakes. Preheat oven to 350 degrees.

Ingredients:

1   3/4 cups of all-purpose flour

1 cup of sugar

1  1/2 teaspoon of baking powder

1/2 teaspoon of salt

1/2 teaspoon of baking soda

2 eggs

1/4 cup of unsalted butter. (Leave out so that it is room temperature)

1/3 cup of  sour cream

2/3 cup of whole milk

1/4 cup of vegetable oil

1 tablespoon of pure vanilla extract (I added an extra 1/4 teaspoon….love vanilla)

 

Directions:

  • In a bowl, blend eggs, oil, sour cream and vanilla extract. Set aside.
  • In another bowl, mix together flour, baking soda, baking powder, salt and sugar.  Set aside.
  • Blend the butter into the flour mixture until it is fully blended.
  • Add the egg mixture into the flour mixture and beat until combined.
  • On low speed, add in milk until combined.  I ended up adding a tiny bit more of milk. (perhaps 2 tablespoons)
  • The batter will turn out to be thin.
  • When filling your cupcake liners, don’t fill to the top…..The cupcakes will end up being high-topped.  Fill them a little over half-way.
  • Bake the cupcakes for 13-15 minutes, depending on oven.  Check to see if they are done by inserting a toothpick into muffin.  If toothpick comes out clean, they’re ready.
  • Remove from cupcake pan and let cool.
  • Enjoy
