Johnsonville Sausage and Couscous with Apples

It’s almost Mardi Gras! So, take out your decorations and start planning a menu for celebrating. Mardi Gras is March 4th. In our house, we love a good celebration. Who doesn’t love a time to entertain, eat, dance and decorate. I’m a southern girl from Mississippi. I went to school about 3 hours away from New Orleans. A lot of my friends at college would drive down to New Orleans for “Fat Tuesday” or Mardi Gras. I didn’t get a chance to go to Mardi Gras. However, I did go to New Orleans right before Mardi Gras during my senior year in college. It was the first time I stayed up all night, intentionally. Though, I don’t plan on staying up all night for Mardi Gras this year, I do plan on celebrating a little and eating a little. I whipped up this little appetizer bowl with Johnsonville Andouille Sausage in my kitchen for such the occasion. It’s a small portion so you won’t feel bad about gobbling it down. Plus, it is so tasty! My kids loved it! Just follow these simple instructions.

Ingredients:

1 package of Johnsonville Andouille Sausage
1 box of Couscous
2 red apples
2 green apples
3 tbs chopped parsley
2 c water
Italian Dressing
chopped walnuts (optional)

Directions:

First, put the Andouille Sausage into the oven. I baked the sausage instead of frying. I wanted to make the recipe as healthy as possible. I baked them for about 20 minutes. These sausages are pre-cooked, so really they just need to be heated. I must say that they are packed with flavor and really juicy. I baked the entire package, but if you want to make less, the sausage is packaged with two individually sealed sections. Really like that.

While the sausage is baking, prepare the couscous. Put in 2 cups of water along with 2tbs of olive oil. Bring to a boil. Set aside.

Pour couscous in a bowl and pour water over. Let it stand for 5 minutes and fluff with a fork. Then, mix in chopped parsley and fluff again.

When the Andouille Sausages is ready, slice into cute portions. Cut the apples last. You want to keep them as fresh-looking as possible.

Now, pick some cute bowls and create this tasty dish. These bowls hold about 3-4 tablespoon of couscous. Remember, these dishes are to serve as small appetizers.

Then, layer in the apples. Add walnuts for extra taste. Drizzle with salad dressing of your choice. I used Italian Dressing. So, how did my kids like this dish? Take a look for yourself.

I could barely finish taking the pictures before they were attacking the dish. They loved it. They loved how the flavor of the Johnsonville Andouille Sausage and sweet and sour apples blended together.

You’ll definitely want to try this dish. It is too delicious not to try. Plus, Johnsonville Sausages have no fillers which must be why it is so juicy. It also contains only premium cuts of pork. I know for certainty that it is so flavorful. I purchased the Andouille Sausages from Food Lion, but I’m sure it’s carried at tons of grocery stores.
